Cooking Class in Paris (Last Paris Blog, We are Caught up)

My mom, Lindsey and myself registered for a cooking class at Le Violon d'Ingres with chef Stephane Schmidt in the 7th arr. It was an amazing morning/lunch. We were with chef Stephane the entire class and we met 5 other very fun and interesting americans from Arizona & California. We learned how to make the most amazing tomato/onion tart, cod with chorizo and a white bean cassoulet and then the perfect ending - chocolate souffle! (Very intimidating, but wonderful dessert) 

It is amazing to be in the kitchen of a restaurant and to witness all the preparation and amount of people to get a restaurant ready for a day. When we arrived at 9:00am, chef Stephane had already been to the markets for fresh ingredients for the days meals. When you go out to eat it can be easy to take for granted what goes on 'behind the scenes.' I was in awe of how seamlessly everyone worked together, especially considering they had 8 students in their way.

We went through each course and how to make it as we each got to do it ourselves. Then the best part, at lunch time we were seated with wine and served our meals. It was fantastic! I highly recommend this experience to any 'foodies' out there.

DEAR DALLAS FRIENDS - worry not, we have the recipes and we are not afraid to make this when we get home. I only hope that we can find the fresh ingredients that are readily available in France. :->
